How to Make a Gluten-Free Apple Pie

Fall is the perfect time for baking, but if you suffer from celiac disease, most baked goods are out of the question. Here's a yummy gluten free recipe for apple pie.

You will need:

* 6 apples (Crispins are perfect)
* 3/4 C rice flour
* 2 Tbsp. agave nectar
* 1 egg (slightly beaten)
* 1/4 C melted butter
* 1/4 tsp. baking powder
* pinch of sea salt
* 1 tsp. cinnamon
* pie pan
* rolling pin

Preheat oven to 420 degrees and set aside a 9" pie plate.

In a medium bowl, beat egg and butter. Then add agave. Mix the dry ingredients in a separate bowl, then add to egg mixture. Gently stir until blended.

Place dough on a rice floured surface and gently roll it out in a circle the size of your pie plate. Cut it in half both crosswise and lengthwise so that you have 4 pieces of equal size dough. With a spatula, transfer each 1/4 wedge of dough gently into pie plate, and pinch seams together. Bake for 20 minutes or until golden brown.

While the crust is baking, peel, core and slice apples. Sautee them in a pan with 1 Tbsp. butter, 1Tbsp. agave nectar (or sugar if you prefer), 1 tsp. of cinnamon, a dusting of cloves and nutmeg. Apples are done when slightly soft. Pour into cooked crust, cool and serve. If you want to be sinful, you can add a scoop of vanilla ice cream.

That's it! It's as simple as, well, apple pie!
