Delicious Mango Salsa

The cranberry mango salsa is a nice dish to serve with some fried chicken or grilled fish. What you have to do is to finely chop some cranberries and have to peel and finely chopped one ripe mango. Take a red bell pepper and dice it into small cubical pieces and now mix all the diced pieces into a bowl. Then peel and dice a red onion and dice it into small pieces then add it in the bowl and mix it well with the other diced fruits. Add some diced parsley leaves on it and one and half tablespoon of chilly flakes and three tablespoon of vinegar, mix it well.

You can even made salad from mango fruit. All you have to do is to peel a mango and have to cut it into small cubes. In a mixer blend the mango pieces with one fourth cup of water to make a fine smooth pulp. You can serve it as a refreshing drink toped with some crushed ice and some mint leaves.

You can also try making some mango smooth cake. Peel the mango and cut it into some big slices. Now add three tablespoon of butter into a pan. Grind some sugar into dust into a mixer and pour the powder over the heated butter into the pan. Stir it well and remember to remove the pan from heat, after stirring for a while then place the pan over heat again for one minute and then again repeat the process. Immediately pour the mixture into the baking tray, then from above place the mango slices above the mixture. Now let it cool and on the side you prepare the cake mixture. Combine cake flour with baking powder, soda, cinnamon and a pinch of salt. Beat four eggs and add it into the mixture, now add some mango juice into the cake mixture and blend it smoothly to make a fine smooth paste. Pour the entire mixture now above the mango slices that you have placed in the baking tray, now bake it in the oven. After baking is complete take it out and let it cool for few minutes and place it over a plate inverted. You can add some cut fruits over the cake to make it more nutritious and tasty.
