In the mood for old fashioned blueberry muffins? Try this easy recipe. Oh yeah, these muffins are extra special because they are made with vanilla ice cream too! 1 cup vanilla ice cream, softened 1 cup self-rising flour 1 cup fresh blueberries 1 tablespoon butter 2 tablespoons sugar Directions Preheat oven to 375 degrees. In a medium bowl, mix softened ice cream with flour. Fold in blueberries. Spoon mixture into six greased muffin cups. Bake 20 to 25 minutes, until inserted toothpick comes out clean. Brush muffin tops with butter and sprinkle on sugar while muffins are still hot. Serve warm.
