Reviews Reviewer Johnnie Anderson Ramseur, NC Recipe Used Chicken and Rice Casserole Ingredients 1 10-3/4-oz. can condensed cream of mushroom soup 1 1/3 C. water 3/4 C. long-grain white rice {uncooked} 1/2 tsp. onion powder 1/4 tsp. ground black pepper 2 C. frozen mixed vegetables 4 skinless boneless chicken breasts (Perdue Perfect Portions) 1/2 C. shredded cheddar cheese Directions Stir the soup, water, rice, onion powder, black pepper, and vegetables in a 11 x 8-inch {2-quart} shallow baking dish. Review "I was pleasantly surprise with Perdue Perfect Portions. I like that they were individually wrapped. It makes it very easy to take out what you need and put the rest back. I was also very pleased that there were no hormones or steroids added, and that it was perfectly sized. Ingredients 8 oz. boneless, skinless chicken breasts, cut into 1 inch pieces 2 Tbs. margarine or butter 1 (16 oz) pkg. Oriental style mixed veggies 1 (4.8 oz.) pkg. Pasta Roni Angel hair pasta with herbs 3 Tbs. Teriyaki sauce Directions In large skillet over medium-high heat, saut? chicken with margarine for 5 minutes or until chicken is no longer pink Stir in 2 C. water and vegetables, bring to a boil Stir in pasta and special seasonings (from pasta box); return to a boil. Reduce heat to medium. Gently boil uncovered 4-5 minutes or until pasta is tender, stirring frequently. Stir in teriyaki sauce. Let stand 3 minutes before serving. Yield: 4 Servings. Review "I was running late after a meeting, so I thought this would be a perfect opportunity to try the Perdue Perfect Portions chicken. We still had some vegetable Lo Mein left over from the night before. I had chosen the Tomato-Basil Chicken portions so I had no need to marinate or add any flavor to the chicken. The grill was fired up and just about the time the Lo Mein came out of the microwave, the chicken was done on the grill. These are wonderful!!! We will definitely be using these again!" ------------ Reviewer Resha Phillips East Bend, NC Recipe Used Chicken, Broccoli, and Corn Casserole Ingredients 4 Perdue Perfect Portion Chicken Breasts (Italian) 1 pkg. frozen broccoli 1 pkg. frozen white corn 1 can cream of chicken soup 1/4 C. cream cheese 2 mushrooms, chopped 1 C. shredded cheddar & mozzarella cheese 1 C. bread crumbs salt, pepper, onion powder, garlic powder - to taste Directions Simmer chicken in small amount of water until done. Add sliced mushrooms and simmer 5 minutes more. Add soup and cream cheese and stir until blended - simmer 5 minutes. Boil broccoli and corn 10 minutes until heated through. Drain and add veggies to chicken mixture. Add seasonings, stir well and simmer for 5 minutes. Preheat oven to 350 degrees. Combine cheese and bread crumbs together and spread on top of chicken mixture. Bake for 15-20 minutes until cheese is well melted and browns slightly. I loved the product and believe I will use it again and again. The packaging is perfect and I believe it will keep the chicken much fresher. I generally purchase the frozen chicken breasts in a large bag and really love how they are frozen separately so I can use as much as I want. However, the Perdue Perfect Portion is even better because of the individual packaging inside the bag. In addition, the flavor was awesome. I was not sure how the chicken would taste, but I was very pleased with the seasoning. It enhanced the recipe that I used today, which you can see below." ------------ Reviewer Janet Gregg Raleigh, NC Recipe Used Emerald Chicken Basil-marinated chicken breasts cooked to perfection! Ingredients 4-5 chicken breasts, boneless/skinless, or bone in with skin Basil marinade (below) Salt and pepper to taste Basil marinade: 1 C. loosely packed fresh basil leaves 1 1/2 Tbs. shallots, minced 2 cloves of garlic minced 3/4 tsp salt 1/4 tsp. pepper 2 Tbs. Balsamic Vinegar 6 Tbs. Olive Oil Directions Place all ingredients in a blender and blend until smooth and well blended. Salt and pepper each chicken breast. Place each breast in a large zip lock bag, pour basil marinade over chicken, and push out as much air as possible and seal bag. Marinate chicken anywhere from an hour to overnight. Periodically shake bag of chicken make sure all the chicken is well coated. Baking: Preheat oven to 350 degrees. Pour chicken out of bag into a baking dish, making sure it is covered with the basil marinade. Cover the dish with aluminum foil and bake for approximately 45 minutes covered and 15 minutes uncovered. Baking times may vary depending on the size of the chicken you're using. When in doubt fully cooked chicken should register 165 degrees on a thermometer that is inserted half way into the thickest part of the breast. Garnish with fresh chopped basil. Spoon the drippings from the chicken over the chicken and potatoes. Review "I used the Perdue Perfect Portions Chicken to make Emerald Chicken. I found the fresh basil quite aromatic and it produced a very good marinade. I allowed the chicken to soak overnight and it produced very tender portions. The marinade was easy and quick to make, it made just the right quantity for the six breasts and it produced a beautiful plate of finished chicken after cooking. The cooked chicken was tender, moist and very flavorful. We enjoyed the chicken for dinner and the leftover breast make delicious sandwiches for lunch the next day. Italian style bread crumbs 4 sun-dried tomato light Flat Out wraps baby spinach leaves onion, thinly sliced tomato, thinly sliced 1 Tbs. feta cheese Italian dressing Directions Coat chicken with bread crumbs, and bake in uncovered baking dish at 350 degrees for 20 minutes. Let cool, then slice. Place spinach, sliced chicken, onion and tomato on the sun dried tomato wrap. Sprinkle with feta cheese, and drizzle with Italian Dressing. Roll the wrap.
